I had no college degree, but I had spent six years working as the assistant to an inventor, and the rest of the time in HR and business management positions. I had some idea how to start and run a business. I&#039;m also a good cook.<\/p> <p>I am a huge fan of the cooking show <a href=\"http://www.foodnetwork.com/diners-drive-ins-and-dives/index.html\">&quot;Diners, Drive-ins and Dives,&quot;<\/a> which is hosted by my idol, Guy Fieri. On one show, he featured a mechanic who used a homemade rotisserie meat smoker in his camper to cook for his employees, and it inspired me. I approached a neighbor who had been pushing me to start my own restaurant, and essentially asked him to put his money where his mouth was. He loaned me &#036;2,000 and I promised him a 25&#037; return on the investment. Once we had that loan, a friend of my husband&#039;s lent me &#036;3,500 with no interest due and a friend of mine lent me &#036;500 with no interest due, for a total of &#036;6,000 and a repayment of &#036;6,500. It wasn&#039;t a lot, but I thought if I worked it right, it might be enough.<strong><\/strong><\/p> <p><strong>I keep costs and overhead low<\/strong><\/p> <p>From my previous work, I had experience filing for an LLC and doing accounting and payroll, so I knew I wouldn&#039;t have to hire a lawyer or an accountant. I invested &#036;500 in <a href=\"http://www.peachtree.com/\">Peachtree Accounting<\/a> software to manage my payroll and finances. As for a head chef, I had that covered, too: I had been cooking since grade school. My father was an excellent chef and we used to make dinner together after he got home for work - things like shish kebabs, ribs and homemade marinades.<\/p> <p>We couldn&#039;t afford rent on a space right away, so on Craigslist I found a &#036;1,700 camper trailer, which my husband remodeled into a kitchen. For the first year we parked the trailer in a vacant lot in High Ridge, MO, off of Highway 30 and made all our food to go.<\/p> <p>I wanted smoked meats to be the center of my menu, but brand new smokers go for around &#036;5,000 - almost my entire budget. So I purchased online directions for building a homemade smoker. I bought about &#036;150 worth of scrap metal, including a 250-gallon oil tank that had come out of an old home. With the help of some neighbors who owned a couple of welders, we were able to create a smoker for less than &#036;200.<\/p> <p>I decided to use a residential stove for my kitchen. I not only saved thousands I would have spent on an industrial stove, but I didn&#039;t need to install a vent hood to pass the safety inspection. Vent hoods cost around &#036;20,000. Using a residential stove means I don&#039;t have a fryer, so I don&#039;t have French fries. But I offer steamed corn, baked beans and other homemade sides instead. My feeling is that if people can&#039;t live without French fries, they should just go to McDonalds.<\/p> <p><strong>I rely on my community<\/strong><\/p> <p>What&#039;s really gotten me through the first couple of years is having the support of my community. In addition to giving me seed money, helping me build my smoker and getting the word out about my restaurant, my neighbors have actually written checks that have allowed me to buy vital pieces of equipment.<\/p> <p>At one point, one of my fridges died and I was putting everything in ice chests. A customer and friend from church dropped by and saw my predicament. When I told her that I was saving to buy a fridge being sold up the street for &#036;1,600, she wrote me a check for the amount on the spot, without expectation of being paid back. I was blown away. Later, a customer and friend of mine sold me a walk-in cooler for only &#036;300. Without this support I don&#039;t think I would have made it this far.<\/p> <p><strong>I had to spend a little more to make a lot more<\/strong><\/p> <p>Last November I finally moved to a new space in Arnold/Imperial MO. The restaurant is small - just enough room for a kitchen and three tables, but it&#039;s made a huge difference.<\/p> <p>The first year - 2009, when I was working out of the trailer - I had very little help. I only worked three days a week and it showed. In 2009 I made only &#036;35,000 in revenue. In the new space, business has picked up. We&#039;ve got more street visibility and people like that there&#039;s a place to sit and eat.<\/p> <p>Now I work five days a week and have almost doubled the size of my menu. I hired four part-time employees and one full-time cashier. Rent is only &#036;550 a month, so I continue to have very low overhead. I am making over &#036;12,000 a month in sales so far this year - quite a jump from last year. Sage conducted the survey this spring, shortly after the Obama Administration announced a series of proposals aimed specifically at small and midsized business owners. <\/p><p class=\"textBodyBlack\"><span id=\"byLine\"><\/span> Respondents weighed in on the small business proposals, on topics such as capital expenditure deductions, new employee tax credits and refinancing existing debt, among others. While there was support for some of the proposals from individual respondents and 61&#037; of those surveyed found at least one of the proposals helpful, there was no universal endorsement, by a majority of participants, for any one single proposal. <\/p><p class=\"textBodyBlack\"><span id=\"byLine\"><\/span> The proposal that was considered to be most helpful -- to extend through 2010 the provision that accelerates the rate at which businesses can deduct the cost of capital expenditures -- was found helpful by only 37 percent of respondents. Other proposals found most helpful were the payroll tax reimbursement (33 percent); elimination of the capital gains tax for investments (33 percent); tax credit for new hires (31 percent); and the immediate expense of qualified investment (30 percent). Look for the words <font face=\"Times\">&quot;<\/font>defense in depth<font face=\"Times\">&quot;<\/font> in your research.<\/font><\/p><p><font color=\"black\">Another important best practice is to set up servers that each perform only one service, and then lock those servers down, or <font face=\"Times\">&quot;<\/font>harden<font face=\"Times\">&quot;<\/font> them, against breaches. A Web server can be hardened so it can only serve Web pages, a database can be hardened to only perform database functions, and so on.<\/font><\/p><p><font color=\"black\">Mixing a Web server and a database server on one box could enable a hacker to breach your database server by hacking through the Web server&#039;s vulnerabilities.<\/font><\/p><p><b><font color=\"black\">An overlooked vulnerability<\/font><\/b><\/p><p><font color=\"black\">Perhaps the biggest security vulnerability is the one most overlooked: employees. A class of hackers called <font face=\"Times\">&quot;<\/font>social engineers<font face=\"Times\">&quot;<\/font> can attempt to persuade trusted employees to divulge sensitive information, such as passwords, access codes, and even unauthorized access to your facility. These hackers are great at what they do.<\/font><\/p><p><font color=\"black\">You can help protect your organization from this vulnerability by educating your employees on handling sensitive information. Employees should never provide passwords or access codes unless they are crystal clear about who they&#039;re talking to, and certain that person is authorized by the organization to have the information. Ensuring employees are well-educated about data security can, in essence, make your workforce <font face=\"Times\">&quot;<\/font>human firewalls<font face=\"Times\">&quot;<\/font> that can protect your organization in ways technology can&#039;t.<\/font><\/p><p><font color=\"black\">If your organization lacks either the knowledge or the skill set to build and execute a solid security plan, you should seek outside help from a professional.<\/font><\/p><p><b><font color=\"black\">Personnel and skill set requirements<\/font><\/b><\/p><p><font color=\"black\">No matter whether you&#039;re providing remote access from your internal systems or working with a third-party partner, particular skill sets are necessary to make any technology choice successful. You should carefully assess if your staff possesses these skill sets. If not, you will need to employ the help of an outside partner.<\/font><\/p><p><b><font color=\"black\">Networking and security<\/font><\/b><\/p><p><font color=\"black\">Firewalls, anti-virus software, intrusion prevention, compliance controls, and policies and procedures must be properly configured, maintained and, if appropriate, rolled out to users. An improperly configured firewall is a leading cause of security breaches from external attackers.<\/font><\/p><p><font color=\"black\">An IT generalist may not possess the specialized skills needed for network and system security. If you plan to manage your remote access solution internally, seeking the services of a professional security analyst is strongly recommended. Some organizations offer certification for analysts; be sure your security professional is certified by a recognized entity.<\/font><\/p><p><b><font color=\"black\">Operating systems and administration<\/font><\/b><\/p><p><font color=\"black\">Most remote application offerings are based on Microsoft&#039;s operating system. Besides needing the skill set to install and configure servers, your IT specialist must be tasked with installing the monthly security patches issued by Microsoft. Failure to apply important security patches to servers is another leading cause of security breaches.<\/font><\/p><p><b><font color=\"black\">Administration of services and access<\/font><\/b><\/p><p><font color=\"black\">Besides knowledge of the operating system, your IT specialist must be an expert in the installation, configuration, and maintenance of the remote application hosting technology you&#039;ve chosen. This knowledge is not the same as knowledge of the operating system; therefore, if you can&#039;t find someone who has both skill sets, you should consider hiring or contracting with an additional specialist to manage access and the administration of services.<\/font><\/p><p><b><font color=\"black\">Application-specific administration<\/font><\/b><\/p><p><font color=\"black\">Expertise in installing, configuring, and maintaining the application you&#039;re making available for remote access is essential too. Ask the software vendor with which technologies the application has been successfully accessed remotely, and whether the vendor supports that configuration.<\/font><\/p><p><font color=\"black\">The vendor saying, <font face=\"Times\">&quot;<\/font>The configuration will work, but is not supported or recommended<font face=\"Times\">&quot;<\/font> should be a red flag. Maintenance headaches are almost guaranteed in these situations.<\/font><\/p><p><b><font color=\"black\">Thinking beyond technology<\/font><\/b><\/p><p><font color=\"black\">While this information just scratches the surface, I hope it caused you to think beyond the technology. Take the time to identify the characteristics of your best customers, and make the effort to seek out more of them. Doing so can result in greater customer loyalty, higher sales per transaction and increased profits.<\/p> <p>One of the key ingredients of formal strategic planning is defining your customer. This is particularly important for small businesses because most simply don&#039;t have the time, resources or personnel to take a &quot;shotgun&quot; approach-peppering every potential customer with marketing materials-to prospecting, says <a title=\"Chicago\" class=\"informlink\" href=\"/topic/Chicago\">Chicago<\/a>-based <a title=\"Ray Silverstein\" class=\"informlink\" href=\"/topic/Ray&#043;Silverstein\">Ray Silverstein<\/a>, author of <em>The Small Business Survival Guide<\/em> and founder of PRO, a small-business peer group advisory board organization.<\/p> <p>&quot;Lack of focus is a problem that often comes up at our meetings,&quot; he says. &quot;Companies try to be too many things to too many customers, thereby missing the chance to target their best potential customer. You should not provide equal service to all customers because not all customers are of equal value to you. &quot;Classify your customers, and reserve your very best priority service for customers on your &#039;A&#039; list,&quot; he counsels.<\/p> <p>Identifying your best customers depends on several variables, some of which may be specific to your industry, location, size and other factors. Next, in descending order of importance, are:<\/p> <ul class=\"newsletter\"> <li>growth potential of the client&#039;s industry;<\/li> <li>extent of the client&#039;s need for her services; <\/li> <li>likelihood of the client showing positive results from the services she provides; <\/li> <li>potential for ongoing business; and <\/li> <li>ratio of client-acquisition cost to projected return on that investment.<\/li> <\/ul> <p>Rick Chess, managing partner at Chess Law Firm in <a title=\"Richmond (Virginia)\" class=\"informlink\" href=\"/topic/Richmond&#043;&#037;28Virginia&#037;29\">Richmond, Virginia<\/a>, also suggests focusing on customers who:<\/p> <ul class=\"newsletter\"> <li>pay their bills on time;<\/li> <li>are likely to survive the current economic difficulties;<\/li> <li>make strategic and/or tactical use of the products or services you currently provide them; and <\/li> <li>offer the greatest potential to become consumers of additional products and services.<\/li> <\/ul> <p><a title=\"Joseph Andreula\" class=\"informlink\" href=\"/topic/Joseph&#043;Andreula\">Joseph Andreula<\/a>, who owns 18 gyms in New York and <a title=\"New Jersey\" class=\"informlink\" href=\"/topic/New&#043;Jersey\">New Jersey<\/a> and an online boxing supply company, is even more pragmatic.
